- Olive oil 3 tsp
- Lemon Juice 2 tsp

Lobster tails can be cooked in numerous styles. Depending upon your choice of cooking you can bake, boil or grill the entire tails. The steaming and grilling are more popular ways of cooking it. For doing so, put the entire lobster in a suitable pot of water so as to cover the entire lobster. Now add a tablespoon of salt to the water. Now boil it for 12 to 25 minutes. The boiling time will depend upon the weight of lobster tails. 12 minutes is the time for 1 pound tails. Put the lobster tails in the pot after the water starts boiling well. After some time remove the claws carefully so that they don't hurt you.
To check if the lobster tail is fully done pull one of the small tail out. If the tail comes off easily it means that your meat is cooked. Second thing to check is the opaqueness of meat. It should not be translucent and the shell should be bright red. The Overcooking will toughen the tails.
To make a piggyback on top of its shell cut it lengthwise, with a knife. Start at the head of the tail. Do not cut the entire length of the tail. Leave a tail flap and an inch of shell above it intact. Separate all meat from the shell except tail flap. After separating almost entire meat, close the shell under it and it will look like a piggybacking on top of its own tail. Sprinkle Olive oil, paprika, salt, pepper over it and serve it with lemon and butter.
One of the main precautions to cook lobster tails is to cook it as soon as you lay your hands on it. If the lobster is dead, it will rot at once. If you want to preserve it, then refrigerate it immediately. It can survive for one night. You can preserve lobster tails for a maximum of two days once they are out of the water.
Another important aspect of cooking the lobster is to keep it moist before cooking. For this purpose the best way is to wrap it within the wet paper napkins. Never preserve them on an air tight container. They will die immediately in such containers.
